Welland distillery and Niagara Falls chocolatier team up to create tasty treats

So, too, does Welland’s NB Distillers and Niagara Falls’ Criveller Cakes.
With the holidays approaching, distillery owner Neeraj Bakshi was looking for something different to offer customers that might pair with his vodka, gin and whiskies.
Bakshi came across the idea of working together chocolate with spirits, then started to look for a partner.
After contacting a distillery parts source, he called Criveller Cakes at 4435 Portage Rd. in Niagara Falls, owned by Leonardo Priore and Giovanni Del Priore.
Del Priore is a master pastry chef trained in Italy, while Priore is a master chocolatier trained in Canada.
“They were referred to me,” said Priore, who said he works 12 to 14 hours a day now to meet the holiday demand for Criveller’s chocolates.
Priore is no stranger to working with chocolate and alcohol.
“I’ve worked with ice wines and occasionally spirits, but I haven’t worked with too many distillers recently.”
After he was given the distiller’s Red Admiral Cardamom Vodka, Chak De and Liquid Gold whiskies and Rose City Gin, he mixed them with premium Belgian chocolate.
Bakshi said about a week later, Priore delivered sample truffles.
Cardamom vodka went into white truffles, Chak De into the dark truffles, Liquid Gold into milk chocolate truffles, and gin into pink truffles with white stripes.
“We had a tasting, and it was a little low on the alcohol side so we increased it a bit,” said Priore, adding NB Distiller’s gin is his favourite.
He said alcohol enhances the chocolate’s flavour.
Chocolate used in the mix is all-natural, with zero preservatives or additives, and the alcohol helps stabilize its shelf life.
But Priore said the tasty treats shouldn’t be left to linger, they should be consumed. The balance between chocolate and alcohol should dance on the palate, he said.
In the weeks since the collaboration started, Criveller’s has made between 2,000 and 3,000 truffles a week for the distillery.
“They order every week,” he said, adding working with Bakshi and his team has been great. “They have fantastic products.”
Bakshi said Criveller’s has been easy to work with and helpful throughout the process of developing the new product for his distillery.
Distillery customers are excited about the alcohol-infused chocolates and they’ve become popular, he added.
“We are pairing bottles with the chocolates and wrapping them up for gift boxes.”
In addition to the chocolate and spirit gift boxes, the distillery can mix and match items — locally made cocktail bombs, organic scented candles and more with various spirits — for customers in time for the holidays.

Calling the distillery makes it easier for Bakshi’s team to work with customers and design a gift basket for their needs.
“We have something for all budget types,” he said, adding he’s encouraging people to shop local to help struggling businesses.
